Bulbul opens on 18 July at 25 Tudor Street, introducing a contemporary Indian dining experience with regionally inspired small plates, innovative cocktails, immersive interiors and an intimate private dining room.

LONDON — A new destination for contemporary Indian dining is set to arrive in the capital as Bulbul opens its doors on 18 July at 25 Tudor Street. The restaurant and bar is the latest venture from Chef Rohan D’Souza and award-winning restaurateur Twinkle Keswani, combining regional Indian flavours with contemporary techniques, inventive cocktails and striking interiors.

Inspired by extensive culinary research across India, the founders travelled through the country’s diverse regions before developing the menu, learning directly from regional cooks, home kitchens and local markets. Their journey has shaped a menu that celebrates the depth and diversity of Indian cuisine while presenting it in a modern and refined format.

In the kitchen, Chef D’Souza is joined by Chef Yash and Chef Ashfaq Shaikh, creating a collaborative culinary approach that draws inspiration from three distinct micro-cuisines from across the Indian subcontinent. Together, the team brings a range of regional influences to every dish.

Among the signature dishes are the Forest Pepper Crab Dosa, a Tamil Nadu-style dosa filled with crabmeat and forest pepper masala; Goan Shrimp Balchão, featuring 48-hour aged and braised shrimp balchão served on crisp melba toast; and Lobster Ghee Roast, inspired by the bold, aromatic flavours of coastal South India.

Complementing the food is the Flight of Bulbul cocktail programme, offering guests a journey through India’s rich botanical and flavour traditions with a carefully curated selection of cocktails inspired by different regions of the country.

Bulbul also features an intimate 10-seat private dining room, providing an exclusive setting for private celebrations, tasting experiences and bespoke dining events.

Opening on 18 July, Bulbul aims to offer London diners a fresh perspective on Indian cuisine, blending authentic regional traditions with contemporary creativity in the heart of the City.
